~香橙相思蛋糕~O(∩_∩)O哈!
原食谱来自 Jasmine Ang
(我做了少许更改)
用料A :
粟米油 45g
鲜橙汁 60ml
鹽 1/4 茶匙
蛋黃 100g(5粒AA 蛋)
全雞蛋 1 粒(60g)
特幼面粉 65g
牛奶 20g
橙皮碎 1粒
用料B :
蛋白 200g
幼糖 70g
塔塔粉 1/2 茶匙
做法 : A
1)粟米油+奶水+橙汁+鹽+蛋黃+全蛋打至起小泡 。
2)加入过筛的特幼面粉再搅滑。
做法 : B
1)把蛋白打散后加入塔塔粉打起,分次加入幼糖打至
硬性发泡。
2)把 A和B混合均匀。倒入8”已铺上油纸的四方模。
3)轻轻震几下模(帮助消气泡),以160°C用蒸烤方式

特幼面粉=是属于什么面粉?cake flour 是吗?

回复删除ur cake very nice! :) i tried with my 8x8 square mold, after i take te cake out from mold. realized bottom of the cake has shrink 1 inch towards the cake body, how come ar? it looks more like japanese cheese cake to me now :(
